Mild Italian sausage or spicy sausage are my favorite to use in this recipe. You can use a turkey sausage or chicken sausage if you prefer, though the stuffing may have a little less flavor.
The best part is that you can adjust the seasonings to your taste, making it as mild or spicy ... sausage. By the way, this sausage is also delicious in my Thanksgiving Sourdough Stuffing recipe!
